Feb 26 - Daily Journal and Good News!

Today I was offered a full time, permanent position with the company I've been temping with for about 6 months. I was so happy, I could have cried. I did have another contract position lined up starting next Monday but my heart wasn't in it - it was purely a financial move. The position I was offered today is Project Administrator at a construction site for one of the major projects the company is working on right now. Its not an ideal job but it is a great, awesome company that I've loved since my first day there. The money is quite a drop from what I'm used to but they are going to give me full benefits immediately :) - a major bonus for me and my family. And..its a foot in the door so I figure I spend a year learning all I can and then another position may come up.

So...my coworkers took me out to lunch and then my husband and boys took me out to dinner. I'm expecting the scale to go up a little tomorrow from all the salt and carbs today - but that's ok, it's part of life, right?

Tomorrow I have to go and try to get my bloodwork done again...let's hope she can find a vein and I can get it over with!!

Feb 25 - Recipe - Lemon Cod with Potato and Spinach Stew

I made this for dinner tonight and everyone loved it - I took my portion out and then put some cooked shrimp into the rest for my seafood loving guys.


Servings: 4 - 5 points per serving

Ingredients
1 pound(s)Fresh or frozen cod fillets (divided into 4 portions)
1/4 tsp table salt
1/4 tsp Ground black pepper
3 tsp olive oil
1/2 cup(s) onion(s)
1 clove(s) garlic clove(s)
1/2 cup(s) tomato(es)
1 pound(s) potato, red, white
2 1/2 cup(s) fat-free chicken broth
1 tbsp fresh lemon juice
2 tsp lemon zest
2 tbsp water
1 tbsp all-purpose flour
5 oz fresh baby spinach

Instructions

1. Sprinkle both sides of the cod with salt and pepper. Heat 1 tsp of olive oil in a large nonstick skillet over medium high heat. Add the cod and cook until browned and just opaque in the centre, about 3 minutes on each side. Transfer to a plate and set aside.

2. Heat the remaining 2 tsp of oil in the skillet over medium low heat. Add the onion and garlic; cook, stirring occasionally until the onion is tender - about 8 minutes. Add the tomato and cook until soft. Add the potatoes, broth, lemon juice and zest; bring to a boil. Reduce heat and simmer, covered, until the potatoes are soft - about 15 minutes.

3. Meanwhile, whisk together the water and flour in a small bowl until smooth. Stir into the simmering vegetables. Add the spinach and cook, stirring constantly, until the sauce thickens and teh spinach wilts. Return the cod to the skillet and heat through.

Feb 24 - Daily Journal

So..today I joined Weight Watchers On Line. I had been thinking about it for awhile and was going back and forth between on line and meetings. I've done the meetings before and I was quite successful, but I did it with my best friend and we both did really well, I stayed on it for almost two years, through a pregnancy even.

This time though, since I'm not working, I don't think I could afford the $18/week meeting fee, the on line fee is $21.95 a month, so huge savings and I have access to recipes, meal tracker, and an online community. I signed up for three months, so I'll see how it goes and if I want to continue. Depends how much I get out of it.

Today was an odd day, as you'll see from my food journal, below (copied from the WW online site - saves alot of typing!).

I was supposed to work today but I also had to go and get my three month blood work done (I go every three months for my endo - diabetes/thyroid disorder), so I planned to go to work after the lab..anyway, the tests are fasting tests, so after 7 last night I didn't eat anything and I wasn't feeling well anyway so I went to bed early. When I woke up at 7, I really wasn't feeling well. Went to the lab, to find it jam packed, it was almost 10:30 by the time they took me in and I was really feeling nauseous and light headed, but thought, "Just get this over with". The lab tech, a lovely lovely lady who always takes my blood, couldn't find a vein in either arm - she always finds one - I have so much trouble with blood tests, she's the only person who has always been able to do it the first time...except for today.

I knew I was going to throw up (you know that feeling?) so we had to stop. I almost fell down when I stood up - and she hadn't taken any blood. On the way home, I felt so sick we had to get something to eat, so I got an order of fries at Wendy's. Then I came home and wanted to sleep but couldn't, so I baked, menu planned etc. and signed up for WW online.

I feel better now I've eaten dinner but still have to go back on Friday to have the bloodwork done..so I missed a day of work which really, really sucks, but I did enjoy the peace and quiet before the kids got home from school.
